Quick Start Charcoal Ignition
Easy charcoal ignition without all the hassle
Do not add the pizza stone/heat deflector on the startup. Adding this too early will delay the ignition process and obstruct the natural heat rise. Trapped heat may also result in product damage and/or intermittent failure. When the charcoal is first ignited, keep the hood open for 10-15mins to aid with ignition. After this, close the hood and allow the 4K to reach your desired temperature before placing the pizza stone/heat deflector onto the grills.
Ensure that your fuel is always kept in a dry place. Damp fuel can take a long time to ignite. We recommend natural lump charcoal for best results. Whilst briquettes can be used, they may take longer to ignite due to the noncombustible materials contained inside the fuel.
Yes, but we recommend small wood chunks or chips. Large pieces of wood will result in overheating and spoilt food.
Not a lot thanks to the thermal insulation properties of this product – its super-efficient to run. Depending on the type of charcoal used and of course, the local weather conditions, about 150- 200GRAMS of coal per hour is all that is required to keep a great roasting temperature.
As a guide, oven temperature should be between 180-200°C and the probe temperature should be around 90°C. Set the probes for a few degrees lower than you need, to cover the residual cooking when you remove it. Give a tap on the bottom, if the loaf is light and sounds hollow, all is good.
For optimum performance, we recommend Everdure by Heston Blumenthal natural lump charcoal. The Fast Flame Ignition System can light briquettes at the press of a button, but due to the large variances in ingredients used by different manufacturers, we cannot guarantee their ignition time.
For even cooking you will need to spread the charcoals in an even layer.
Long slow 150°c for 4-5 hours and some smoker chips here and there
Roast the leg until the temperature in the core/center reaches 65°c. You could go to 70°c but no higher!
